Solution
When ingestion of large items to Exchange is needed, there need to be changes done on the Exchange side:
1) The Account under which the ExchangeImport module is running need to have a mailbox in the target Exchange (Microsoft technote how to move mailbox)
2) Exchange item and attachments size limits need to be changed. (How to change item and attachment size limits)
One thing to keep in mind with the web.config files. During some Exchange Updates, the web.config files get overwritten. These files need to be backed up and any updates you make need to be made again to these files. (Bad practice is to overwrite the new files as some items may have been changed)
